I think we're mixing two questions here:
which species and if Maple how will it perform? and
is end grain a good counter top surface?

It will only get wallowed if you hack away at it with a cleaver all day
every day. And the butcher blocks on which this occurred were free standing
and were regularly scraped and resurfaced.
