[Greenbuilding] thermal implications of a vault vs flat ceiling at R-38?

I feel that the peak of a cathedral ceiling does nothing for the space that it sits on, 
besides offering more exterior surface for heat loss. True, I have no proof of enhanced
stratification, but shouldn't a taller space accommodate a greater differential? We used 
to live in a church, where I always felt that the warm air was getting further away..
