yes, butcher block is a careless term; the horizontal strip stock (what I referred to as Bally type) bears no resemblence to the massive, ancient, concave butcher block my grandfather had in the back of his shop. with regard to beech, I found to my dismay (and expense to replace), it behaved in the presence of moisture like a cranky two year old, writhing and twisting to be free of its mother's grasp.<br>

After a lot of thought and research, I'm probably going to go the butcherblock route. We have oak butcherblock counters in this current house (bought at IKEA--yes, the wood was probably imported), and we love them.<br>

For reasons I don't understand people have gotten in the habit of referring to all manner of glued up wooden surfaces: counters, cutting boards, etc. as butcher block, even though the visible surface on those more often than not is edge grain. <br>
