Pine or walnut for counters. I've ripped out numerous Bally type maple butcher block counters, warped and split and good for nothing but the stove. I think the heat and moisture from the dishwasher is what did them in.<br>
<br>Conversely, I just visited a home I owned in the 80's. The 6/4 pine counters, with drop in sink and dishwasher, which I made and coated with 4-5 coats of Varithane in probably '88 are in perfect condition, just mellowed to a toasty hue. My experimental urban harvest black walnut vanity top, finished with tung oil, with undermount (yes, undermount) sink has shrunk slightly, but is perfectly flat and as impervious to water and other insults as a good rifle stock.<br>

Glad you like them. We were originally going to use maple, but the lumberyard was out of maple flooring and suggested the cherry and we are glad it worked out that way. For our counters we used unfinished 3/4" cherry flooring and then sanded and sealed it with several coats of polyurethane. They have been standing up quite well for the last 6 years.
