For what it's worth, this detuning of chest freezers is common among
homebrewers for storing/aging their beer. It works quite well and
only requires an overriding thermostat.<br>

grocery stores. Here in Alexandria, they use the vertical ones(
cheaper energy, better display) . There was even a discussion on
one engineering type who detuned a chest type freezer to the level
