I get about the same effect in my Modified Weber.  The shape of the kettle is very useful, but not required at all.

This can be the case.  My secondary air slot does introduce secondary are tangentially to the fuel chamber.  The tornado effect is good for turbulence, but a central spire of flame is usually full of soot, so I avoid these.  My deflectors appear to control this well.

Have you tried other forms of biomass?  Cherry pits? Grass? etc?
