Dear Stephen

It has to be heated to almost the very edge. The edge of the enjera is thicker and takes the most heat to cook. The clay material to some extent makes the centre less likely to overheat. Spreading the heat around is a challenge from a concentrated source. See Samson's work on this.

Hi Stephen, you need to have a firechamber/ heat exchanger to be able to heat the ceramic plate on top, the mitad. there are various diameters, but you should aim at something between 55 and 65 cm diameter.
