Crispin is right,
That is a typical char recovery pot - to gain some charcoal for grilling.
Not only in Cambodia, but also in Lao PDR and Northern Thailand.
Families cooking with charcoal usually do the same, to extinguish remaining
charcoal amber in the combustion chamber so they can use it again in the
next cooking session. No char for soil.
