I'm working on a newly added upstairs bathroom that is too small to
usefully accommodate a fiberglass stall and would like to experiment with a
wall-less shower that is situated in the corner of the room, so would have
a curtain on two sides. The obvious way to protect the walls would be to
tile them but I am curious if there are other materials one might consider?
The floor will be tiled and I plan to frame and tile a lip to contain the
water running down the inside of the curtain.

Exhaust ventilation is important!

Open showers in hotels and houses I have stayed were low tiled walls on two sides you could see over. Tilted floor to drain.

Tadelakt plaster might be alternative to the tiles.
I've not used it but have read a bit about it. It's a lime based plaster
that is burnished and sealed with oil.
I would imagine that the wall to floor transition would be a critical point.

Natural Hydraulic Lime (NHL) plaster would probably work since it?s used exterior. Has its own quirks, as anything would.

Might want to crown the floor to a linear drain. And ventilate with a fan w/a condensation sensor.

?I don't know about using plaster.  In our current home our walls are
drywall plastered over stucco.  In the shower we eventually had to apply an
exterior gloss? paint to waterproof the shower.  (The moisture went into
the walls to the tiles shower base where it became grotty).  In the rest of
the house, a heavy rain sends moisture through the walls.  Bad news all the
way around.  The designer should have known better; a simple felt
application on the exterior walls would have taken care of the problem.

For an open shower in another house I too am looking for suitable shower
walls, something other than tile (to eliminate the eventual inherent grout
cleaning up necessitated with this use).  I've looked into acrylic walls
but these are very expensive, over $500 for a 4x8 sheet, material alone.

Am open to suggests as well.

Consider repurposing tempered patio door units, either vertical or horizontal, depending on space dimensions.
Dry glaze with gaskets and metal or recycled plastic trim boards.
