[Digestion] Production of substrate not constant during the year

Hello everybody. 
If the production of my substrates (i.e. milk whey and dairy manure) is not constant during the year, how could I act?
 I mean, working on the feasibility study, should I consider a storage or something similar?
Can I store whey and manure for some weeks?
