You will have settlement of the material if you store it. The only viable
solution is to add some material like green waste or straw and keep it
mixed. Given that your waste material is probably 95% water, I am not sure
it is viable financially.

If the production of my substrates (i.e. milk whey and dairy manure) is not
constant during the year, how could I act?
 I mean, working on the feasibility study, should I consider a storage or
something similar?
Can I store whey and manure for some weeks?
