G'day Edward (et al),

I cannot answer the microbial questions but would comment that it 
appears that methane (biogas) production is related to microbial growth 
rate (Chen's model, see DigiCalc.zip on 
http://biogas.wikispaces.com/Online+Course ).

Start-up time depends on temperature and inoculation level as well as 
digestibility of waste, so may range from a couple of days to a couple 
of weeks. Note that the first gas will be carbon dioxide as residual 
oxygen is consumed by faculative microbes.
