Our experience is exactly yours Kathy, even when the wood is well stacked
etc.  The books say you should wait one year.  We don't burn ours for two
and I think it burns better, probably the result of imperfect drying during
that time.  IMO, as long as you have the time and don't have perfect drying
conditions, why not wait two years.  Longer and you have other problems.
