There's always Scotty's Castle & its underground works in Death Valley.

Also, there's Bill & Tina Hodge who built an underground house in the
Warner Mountains (Modoc County, N.E. Ca.) in the days of the WEC, with
concrete shell construction, a la several concrete boat articles in
those WECs. Very nice house indeed, they're still living there and
running Eagle Peak Herbals & Wildlife Rescue and Rehabilitation. One
might get to see some eagles being cared for during a visit, as well as
their wonderful house.
