Dear Gus / Gustavo,

Yes, I could see the video this time. Informative. Comments:

1. Of course I will say that the same upper structure of the
institutional stove would also work with a moderate size TLUD underneath.

2. I would like to see the inside of the large black outer cylinder.
It has a central cylinder to direct the flames up to the pot (very
good), but I think that is held in place by bars, not by a bottom plate,
because the hot gases need to go downward to the mouth of the chimney.

3. Two major differences from the institutional cooker by Fred and
Damon at Colgan's Island:
A. No insulation
B. The hot gases are not required to make an upward run along the side
of the pot, and then downward in a separate annulus space before exiting
to the chimney at the level of the bottom of the pot.

Those two differences would considerably alter the costs, and we are not
sure how much impact on efficiencies/fuel use/time to boil.

Can you please tell us the retail price (equivalent in US Dollars).

I really like that it is dual purpose, with the plancha alternative.

Paul
