Directly in line with our discussion about excess air, have a look at these
beauties:



Clay Stoves in South Sulawesi, Indonesia

 

The unusual bowl-shaped container on the near side holds charcoal for
roasting meat. A pot will sit on the three pot rests attached to the rear
section.

The fire is in both sections - normally a wood fire under the pot that turns
wood into charcoal, providing the fuel for roasting meat section. The
elevated walls around the whole fire limit the ingress of air lowering the
excess air level in the wood fire under the pot, and choking the lower
portion of the fires quite effectively, making charcoal in the oxygen-poor
environment.

The cook can easily push the fuel to where it is needed at the time or add
more as required.

The air has to descend into the chamber in order to get to the fire. It is
heated as it enters, providing negative draft and counter-balancing some of
the draft from the fire. While it will do so in a disordered fashion, the
effect is present. It may be the first char-making stove deliberately
crafted to do so! Other stoves using charcoal from the wood fire for
roasting meat can be found in North Sulawesi and South Kalimantan. One has
significant excess air control using a pot as the controller.
