That is a question worth asking. The peri-urban users of charcoal might ask
similar questions about why we buy smart phones when talking face to face is
free.

 

People spend their money, usually all of it, for reasons that are deeply
cultural. Of all behaviours, changing something related to cooking is the
most difficult.
