Yes I took that as read when I specified a lid, which is to prevent
vapour escaping.
Dieter's mention of heat retention cooking is relevant , my kitchen
experiments show that at the small meal level, 4 portions of beans and
rice, you need very good insulation to avoid an undercooked meal, at
the institution level the scaling will favour large pots as the volume
to surface area ratio is better.
