Dear Crispin and All, 
Here are similar stoves & ovens I saw in Morocco in 2012  - the market photos are in Meknes;  the small mud stove/oven in the Sahara desert near Erfout; Ali's stove/oven above at the UNESCO  Ben Haddou Heritage Site;  and stoves/ovens along the highway to Marrakech.

Dear Friends 

  

This is fired by wood. Note the very small grate at the bottom and the hole at the back serving as a chimney, sort of. 

  

Flat bread is baked by being stuck against the inside surface of the ‘drum’. As reported before, there is a clay liner inside, purchased at the market which is building into the final position outside the home.  When baking the front door is closed using the metal plate.
