Dear Andrew

Re the Benzo(A)pyrene

Do you recall that last year I was working with James Robinson at SNV in Ghana? We produced a fish smoker that reduced the BaP dramatically (97%) by changing the temperature of processing.

It is in the meant. But is it in the vegetables? We demonstrated that it is produced by overheating the fish oil, and is not from the smoke. I think most foodie people believe it is from the wood. It seems to be almost entirely from the heating of the food.

High oil fish dried traditionally or in the FAO promoted 'improved smokers' have very high BaP‎ and the non-oily fish do not. Same fuel.

Has anyone measured BaP in smoke? Philip, maybe?

Thanks
Crispin

Well there may well be no evidence yet, it's only been around since
1974 and I was fully grown by then.

I well remember a conversation with my GP (medical doctor known as
general practitioner in UK) in 1970, he was also the medical officer
for our local gasket factory, denying any problems with asbestos which
was used in the factory. There have subsequently been a cluster of
asbestos related lung cancers in the town in workers and this is
expected to peak around now.

I'd love to see this but as benzo[a]pyrene is found in woodsmoke (and
in charred meat) is this likely?

Andrew
