Thanks for the video.
A lot of the smoke is generated by having the flames pass through the set of holes above the fire. The metal plate is cooling the flames and killing the combustion, particularly when the flame is very small.
In general, never place metal above a flame in a position where it can be touched. Invariably it cools something and created smoke, as well as CO which you can’t see, but it is there.
