Thanks Crispin, very interesting.

When will there be more consideration for the commercial use of biomass
energy such as for food preparation like in hotels, bakeries, meat roasting
joints etc? They use an unproportionally large amount of firewood and
charcoal as compared to simple home users, especially in urban areas where
people don't have time for cooking. (Part of this rise in red meat
consumption is due to the social trend of eating more street foods, which
are ready-to-consume meals often including processed meat sold by vendors
in public places FAO 2011
<https://www.researchgate.net/publication/311224034_Nyama_Choma_Culture_Implications_of_Increased_Red_Meat_and_Alcohol_Consumption_in_East_Africa>
)

Does anyone know of any air quality studies of places like a busy Nairobi
pub and it's kitchens? I saw that UNDP has made a new fish smoking stove
https://www.cd.undp.org/content/rdc/en/home2/ourwork/environmentandenergy/successstories/smoking-fish-with-improved-stoves.html
*“With UNDP funding, we are popularizing improved furnaces that use less
wood to smoke fish in Mbandaka and the surrounding area''* does this mean
it uses less wood to produce more smoke?

Here is a nice smoked tilapia recipe from the National Rwandese newspaper
https://www.newtimes.co.rw/section/read/184367 that raises the question, if
you use a tier 1 stove as a smoker, is it still a tier 1 stove?

Best,

Teddy
