I've never worked on winery wastes but brewery & distillery wastes do well.
Often well suited to UASB processing or an anaerobic filter if the SS level
is low.

If there was enough residual alcohol in the waste to inhibit AD, the winery
would go broke very fast. (Unless they started bottling the waste!) Traces
of alcohol are no bother - micro-organisms like the stuff as much as many
humans do - fortunately without the tendency to addiction......

Low pH might be more of a problem. Mixing with other wastes (eg WWT sludges)
can relieve that - but sludge quantity might not be enough alone. Consider
importing other wastes?
